Fancy Friday Soup Sessions: Italian Abruzzese Lentil

This soup has become a firm family favourite. So that the lentils don’t dry out, you might need to top up the water in addition to the 1.5 litres the recipe prescribes, but if it resembles a hearty Italian stew instead of a soup, it still works and is delicious.

This recipe contains bacon, but you could supplement with capers or olives if you’re vegetarian or vegan. It goes well with a nice drop of heavy red, unless you’re at work and can’t partake.
